Pancakes are probably one of my most favourite breakfast. I could honestly have them everyday, but I doubt dubbing everyday as pancake day is good for anyone. This is exactly what led to researching different pancake recipes that are composed of whole, clean and yummy ingredients. I have made recipes with oatmeal flour (blend oats in blender or food processor), however, this pancake recipe is one of the better ways to use this kind of flour. This recipe will surely satisfy pancake cravings any day of the week.
Vegan Banana Oatmeal Pancakes
1 medium ripe banana
1/2 cup almond milk
3/4 cups almond flour
1 tsp vanilla extract
1 1/2 tsp baking powder
1/2 tsp cinnamon
2 tbs honey or maple syrup
- Mix all of the ingredients in a bowl.
- Heat non-stick skillet on medium heat.
- Your choice of the size of pancake batter to be placed on skillet.
- Wait until pancake bubbles, then flip.
